S’mores Cookie Sandwiches Recipe — Gooey Chocolate Marshmallow Treat

While testing browned butter cookie recipes and spending evenings around a campfire with my 3- and 4-year-old, we discovered how much we love these S’mores cookie sandwiches. Using two cookies instead of fragile graham crackers makes them easier for little hands and less messy for a mom who wants to sit as much as possible this summer.

Below I include our two favorite cookie choices in the recipe card, and I list additional cookie ideas further down. These sandwiches are flexible—use whatever sturdy cookie you prefer and adjust fillings to taste.

Ingredients

  • 6 regular marshmallows *see note
  • 1 dozen Browned Butter Peanut Butter Chocolate Chip Cookies or Browned Butter Chocolate Chip Cookies additional cookie options listed below.

Additional filling options:

  • Hershey’s bars, Reese’s peanut butter cups, peanut butter, Nutella, etc.

Instructions

Broiler method:

  • Place 6 cookies (bottoms up) on a baking sheet. Top each cookie with a marshmallow (regular or jumbo depending on cookie size).
  • Place the tray under the broiler and watch closely. Broil until the marshmallow tops are golden, remove and carefully turn each marshmallow, then broil again until both sides are golden.
  • Add optional fillings or chocolate on top of the broiled marshmallows, then sandwich with a second cookie. Serve immediately.

Campfire method:

  • Roast marshmallows to your liking—golden, dark, or charred. Remove from the stick and place on a prepared cookie. Sandwich between two cookies or enjoy open-faced.

Notes

For larger cookies use a jumbo marshmallow or double up regular marshmallows if needed.

Personalizing your S’mores sandwich cookie:

If you want to reduce sweetness, serve open-faced with just the marshmallow. For kids, two smaller cookies make the sandwich easier to hold. Try spreads like Nutella, Biscoff, almond butter, or plain peanut butter to balance the marshmallow’s sweetness. Experiment with different candies and cookie bases to find your favorite combo.
