We’re about six weeks out from Christmas, and this baby is due just a few days before the holiday, so the countdown is officially on. I’m skipping Thanksgiving decor this year and starting Christmas decorating early—just in case.

Even with holiday prep underway, I haven’t forgotten Thanksgiving. It’s one of my favorite food holidays, and this pie is top of the list. Below is a straightforward, delicious recipe: a thick graham cracker crust, a salted dulce de leche filling, a tall cloud of whipped cream, and a crunchy pecan-graham crumble on top. The crumble is addictive—resist eating it like cereal and save some for the pie. If you do have leftovers, it’s excellent over ice cream.

Dulce de leche makes one heck of a pie
Dulce de leche resembles caramel but offers a mellower, butterscotch-toffee flavor and a thicker consistency—more like peanut butter—making it ideal for pie filling. It won’t ooze out of slices but will hold its shape. You can make homemade dulce de leche from sweetened condensed milk by simmering unopened cans in water (stovetop), using a slow cooker, or an electric pressure cooker. Alternatively, use pre-made canned dulce de leche if your store carries it.

How to Make Dulce de Leche Pie
Start with a thick graham cracker crust—this pie benefits from a substantial crust. Then add salted dulce de leche, a generous layer of whipped cream (lightly sweetened), and finish with the pecan-graham crumble for texture and crunch. Ingredients
For the dulce de leche
- 2 (14-oz) cans sweetened condensed milk* (or 2 cans pre-made dulce de leche)
- 1/2 teaspoon flaked sea salt (fleur de sel)
For the crust
- 2 1/4 cups graham cracker crumbs**
- 2 tablespoons sugar
- 1/4 teaspoon salt
- 7 tablespoons butter, melted
For the Pecan-Graham Crumble
- 6 full sheets graham cracker
- 3/4 cup pecans
- 1/4 cup butter, melted (half stick)
For the whipped cream
- 2 cups heavy cream, very cold
- 2–4 tablespoons powdered sugar (to taste)
- 1 1/2 teaspoons vanilla
- Optional: more dulce de leche to drizzle (or salted caramel topping)
Instructions
- Make homemade dulce de leche from the 2 cans of sweetened condensed milk, or use two cans of store-bought dulce de leche. Stir the dulce de leche in a bowl to remove lumps and add 1/2 teaspoon flaked sea salt (or to taste). Set aside.
- Make the crust. Preheat oven to 350°F (175°C). Crush graham crackers to make 2 1/4 cups crumbs (use a food processor or a zip-top bag and rolling pin). Combine crumbs with 2 tablespoons sugar and 1/4 teaspoon salt, then add 7 tablespoons melted butter and mix thoroughly.
- Press the mixture into a 9-inch pie pan, pressing the crust into the bottom and at least 1 inch up the sides. Bake at 350°F for 10 minutes. Let cool completely—chill in the fridge or freezer if you’re in a hurry.
- Pour the salted dulce de leche into the cooled crust and smooth the top. Cover tightly and refrigerate for 2–4 hours until fully chilled.
- Make the Pecan-Graham Crumble. Preheat oven to 350°F if needed. Place 6 graham cracker sheets and 3/4 cup pecans in a bag and crush roughly to your preferred size. Toss with 1/4 cup melted butter, spread on a baking sheet, and bake 9–12 minutes, stirring every 3–4 minutes, until crisp and lightly browned. Cool completely.
- Make the whipped cream. Combine 2 cups very cold heavy cream, 2 tablespoons powdered sugar, and 1 1/2 teaspoons vanilla. Beat on high until soft peaks form, 2–5 minutes depending on your mixer. Taste and add more sugar if desired, remembering the pie will already be sweet from the dulce de leche.
- Top the chilled pie with the whipped cream, spread evenly, then sprinkle the pecan-graham crumble on top. Reserve some crumble to garnish individual slices if you like.
- Optional: Warm about 1/2 cup dulce de leche and thin with a tablespoon of cream at a time until drizzling consistency is achieved. Drizzle over the whipped cream for extra richness.

Notes
*You need two cans of dulce de leche for the filling. If you want extra drizzle on top, you’ll need a third can to warm and thin for drizzling, or use a salted caramel topping instead.
**Two and a quarter cups is roughly 13.5 full graham cracker sheets (one and a half standard packages). If you buy a family-size pack with different-sized crackers, measure the crumbs.
Make-ahead: The pie can be assembled through filling (before whipped cream and crumble) and stored well covered for up to 3 days. Store the pecan-graham crumble in an airtight container at room temperature for up to 5 days. Whip the cream close to serving time for best texture; whipped cream will deflate over time. Add the crumble just before serving so it stays crisp.
