Homemade Fermented Ginger Ale

Ingredients
- 4 inch piece Fresh ginger, chopped
- 4 cups Water
- 1/3 cup Dried cane juice (sugar) (White cane sugar can be substituted; add 1 teaspoon molasses if using white sugar.)
- Juice of one lemon
- 1/4 cup Ginger bug (See related video for how to make a ginger bug.)
Instructions

Place the chopped ginger and water in a saucepan. Bring to a boil, then reduce to a high simmer and simmer for 10 minutes to extract the ginger flavor.

Remove the saucepan from the heat and stir in the sugar until it dissolves completely.

Strain the ginger liquid into a 4-cup measuring cup or bowl using a mesh strainer to remove the solids.

Allow the mixture to cool to room temperature, then stir in the ginger bug and the lemon juice until combined.

Decant the mixture into a jar, seal with a lid, and allow it to ferment at room temperature for 2–6 days. Loosen the lid once a day to release built-up gas. When the soda reaches your preferred level of carbonation and flavor, refrigerate to slow fermentation and enjoy chilled.
