My friend Jenny sent me this lovely slow cooker recipe this morning. Aside from baked goods, I don’t usually cook with pumpkin, so this is a welcome change — perfect for autumn. I’m adding it to next week’s menu! 
Slowcooker Pumpkin Chicken Stew

Ingredients
- 3 boneless skinless chicken breasts
- 2 cups pumpkin puree
- 28 ounce can diced tomatoes
- 2 small cans tomato sauce with roasted flavor
- 2 small cans diced chilies
- 1 bag frozen shoepeg corn
- 2 cups fresh spinach added 30 minutes before serving
- 2-3 tsp. ground cumin
- 1 tsp. salt
Instructions

Place all ingredients except the spinach into the slow cooker. Cook on high for 6–8 hours, until the chicken is tender.

About 30 minutes before serving, add the fresh spinach and stir it into the stew until wilted and evenly distributed.
Notes
I leave the chicken breasts whole when I add them to the crockpot; after about six hours the meat shreds easily when stirred. If you prefer, cut the raw chicken into bite-sized pieces before cooking for a quicker finish.
