Slow Cooker Pumpkin Chicken Stew with Autumn Herbs and Creamy Sauce

My friend Jenny sent me this lovely slow cooker recipe this morning. Aside from baked goods, I don’t usually cook with pumpkin, so this is a welcome change — perfect for autumn. I’m adding it to next week’s menu! pumpkin chicken stew

Slowcooker Pumpkin Chicken Stew

Ingredients

  • 3 boneless skinless chicken breasts
  • 2 cups pumpkin puree
  • 28 ounce can diced tomatoes
  • 2 small cans tomato sauce with roasted flavor
  • 2 small cans diced chilies
  • 1 bag frozen shoepeg corn
  • 2 cups fresh spinach added 30 minutes before serving
  • 2-3 tsp. ground cumin
  • 1 tsp. salt

Instructions

  • Place all ingredients except the spinach into the slow cooker. Cook on high for 6–8 hours, until the chicken is tender.
  • About 30 minutes before serving, add the fresh spinach and stir it into the stew until wilted and evenly distributed.

Notes

I leave the chicken breasts whole when I add them to the crockpot; after about six hours the meat shreds easily when stirred. If you prefer, cut the raw chicken into bite-sized pieces before cooking for a quicker finish.
