How to Make Roasted Beet Hummus

Ingredients for the hummus are straightforward: medium beets, canned chickpeas (reserve a few for garnish), tahini, lemon juice, a clove of garlic (or more to taste), a pinch of cumin, sea salt, black pepper and extra virgin olive oil to achieve the desired consistency. For pita chips, you’ll need pita pockets, olive oil and dried herbs such as basil and oregano.

To roast the beets: preheat the oven to 400 F (200 C). Wash and dry beets, wrap each beet unpeeled in aluminum foil and roast for about 1 hour. Pierce with a fork to test doneness. Allow to cool, then peel and roughly chop.

To make the hummus: in a food processor combine the chopped roasted beets, drained chickpeas, tahini, lemon juice, garlic, cumin, salt and pepper. Blend until smooth while gradually adding olive oil to reach a creamy texture. Taste and adjust seasoning. Transfer to a serving bowl and garnish with extra olive oil, black sesame seeds and reserved chickpeas.

For pita chips: cut each pita into 8 triangles. Toss the pieces with olive oil, dried basil, oregano, salt and pepper. Spread in a single layer on a baking sheet lined with parchment and bake 5–7 minutes at 400 F (200 C) or until golden and crisp—watch closely to avoid burning.

Store hummus in the refrigerator for up to a week or freeze for up to three months. Pita chips keep well for several days in an airtight container.

Ingredients (high level): 2 medium beets, 1 can (15.5 oz / 400 g) chickpeas, 3 tbsp tahini, 3 tbsp lemon juice, 1 clove garlic, 1/4 tsp cumin, 1/2 tsp sea salt, 1/2 tsp black pepper, 1/4 cup extra virgin olive oil (more if needed), reserved chickpeas and sesame for garnish. For pita chips: 2 pita pockets, 2 tbsp olive oil, 1 tsp dried basil, 1/2 tsp dried oregano, 1/2 tsp sea salt.

Instructions:

  1. Roast the beets at 400 F (200 C) wrapped in foil for about 1 hour. Cool and peel.
  2. Combine chopped beets, chickpeas, tahini, lemon juice, garlic, cumin, salt and pepper in a food processor. Blend, adding olive oil gradually until smooth. Adjust seasoning and transfer to a bowl. Garnish as desired.
  3. Make pita chips by tossing pita triangles with olive oil, herbs, salt and pepper. Bake 5–7 minutes at 400 F (200 C) until golden and crisp.
