1. Preheat the oven to 350°F (175°C).
2. In a large bowl or stand mixer, combine 2 cups flour, 1 teaspoon baking soda, 1 teaspoon baking powder, 1 teaspoon salt, and 1/2 teaspoon cinnamon. Stir with a fork until evenly mixed.
3. Add 2 1/2 cups old-fashioned oats to the dry mix and stir to combine.
4. Stir in 1 1/2 cups packed brown sugar until distributed through the oat and flour mix.
5. Melt 1 1/4 cups butter and pour it into the bowl. Mix for about one minute so the butter is fully incorporated.
