Ingredients

  • 1 ½ cups all-purpose flour
  • 1 ½ teaspoons baking powder

  • 6 tablespoons sour cream, at room temperature
  • 1 cup sugar
  • 3 eggs, at room temperature
  • 1 ½ teaspoons vanilla extract (or 1 teaspoon vanilla paste)
  • ¼ teaspoon almond extract (optional)
  • 2 cups pitted and halved cherries
  • 1 tablespoon sugar, to sprinkle before baking

Instructions

  1. Preheat the oven to 350ºF (180ºC).
  2. Grease a 9-inch round or springform cake pan with butter or shortening, or use baking spray.
  3. In a large bowl, beat the softened butter and sour cream until smooth and lump-free.
  4. Gradually add the sugar while continuing to beat on medium-high speed until the mixture is lighter in color and the sugar begins to dissolve, about 3 minutes.
  5. Add the eggs one at a time, beating well after each. The batter may look a little curdled at this point; that will correct once the dry ingredients are added.
  6. Mix in the vanilla and almond extracts.
  7. Sift together the flour, baking powder, baking soda and salt. Add the dry mixture to the batter in two additions, mixing on low speed just until combined. Avoid overbeating to keep the cake tender.
  8. Pour the batter into the prepared pan and smooth the top.
  9. Arrange the pitted, halved cherries evenly over the surface, covering most of the cake.
  10. Sprinkle the tablespoon of sugar over the cherries for a slightly crunchy top.
  11. Bake 50–60 minutes, until the top is golden and a toothpick inserted in the center comes out clean. If the top browns too quickly, tent with foil after 40–45 minutes and continue baking until done.
