- 230 grams freshly shredded/grated carrots
- 200 grams unbleached all-purpose flour
- 45 grams buckwheat flour
- 4 grams ground cinnamon
- 5 grams baking soda
- 5 grams table salt
- 2 grams baking powder
- 1 gram freshly ground nutmeg
- Pinch ground cloves
- 172.5 grams browned butter (liquid)
- 102 grams granulated sugar
- 72 grams demerara sugar
- 3 eggs
- 20 grams vanilla bean paste
- 41 grams mascarpone cheese
- 117 grams coconut cream (or 35% whipping cream)
- 20 grams maple syrup
- 1 gram ground cinnamon
- 3 grams vanilla bean paste
- 946 grams carrot juice
- 14 grams unsalted butter
- 5 grams salt
Method
- Preheat the oven to 350ºF (175ºC). Place a silicone mold or prepared pan on a baking sheet.
- Using a food processor or hand grater, shred the carrots and set aside. Quantity will vary with carrot size.
- In a large bowl, sift together the flours, cinnamon, baking soda, salt, baking powder, nutmeg, and cloves; set aside.
- Add the browned butter, granulated sugar, and demerara sugar to the bowl of a stand mixer fitted with the paddle. Mix on medium until incorporated.
- Crack the eggs into a spouted bowl. With the mixer on low, add eggs one at a time, blending well after each addition. Add the vanilla bean paste.
- Stop the mixer and add the flour mixture. Start on the stir setting so flour doesn’t scatter, then increase to medium and mix until just combined. Scrape the bowl and beat a few seconds more.
- Remove the bowl and fold the grated carrots into the batter. Spoon or pipe the batter into the mold about three-quarters full. Tap the baking sheet to settle the batter and release air bubbles.
- Bake on the middle rack for 35–40 minutes. Remove and cool 15 minutes on a wire rack, then unmold and cool completely.
- Chill a mixing bowl. Add chilled coconut cream (or whipping cream) and mascarpone. Whisk until medium-stiff peaks form, then add maple syrup, cinnamon, and vanilla and whip to firm peaks.
- Add carrot juice to a saucepan and simmer over medium-high until reduced to about 1 cup. Add butter and salt, then emulsify with a blender until smooth to create a carrot caramel.
- Unmold the cooled cake. Use an offset spatula to spread the whipped mascarpone evenly and smooth with a scraper. Chill the cake to set the topping.
- While chilling, roast pecans at 350ºF for 5–7 minutes. While hot, toss with the carrot caramel, return to the oven for up to a minute to set, then cool on the tray. Top the chilled cake with the pecans and drizzle a little extra caramel if desired.
