Introduction
Tender Brussels sprouts tossed with crisp bacon, toasted almonds, sweet dried cranberries, and shaved Parmesan, all brought together by a light citrusy dressing.
We try to include at least a couple of vegetable side dishes with dinner most nights. When I return from the market with something other than mixed greens, it always earns appreciative smiles — a gentle sign that we may be eating salad a bit too often.
With autumn here, I’m sharing a simple Brussels sprouts recipe that highlights bacon’s return to the kitchen. The combination of salty bacon, crunchy almonds, and tart-sweet cranberries is a lovely balance of flavors and textures.
This side pairs beautifully with roasted chicken but also works well chilled as a substantial salad for lunch.

Ingredients
- 2 slices bacon cut into 1/4-inch pieces
- 1 lb Brussels sprouts about 1 pound, very thinly sliced
- 2 tbsps dried cranberries 2 tablespoons
- 0.25 cup almonds 1/4 cup, chopped
- 2 tbsps Parmesan cheese 2 tablespoons, shaved
- 0.5 lime juice of 1/2 lime
- 1 tbsp olive oil 1 tablespoon
Instructions

Bring a large pot of salted water to a boil. Blanch the sliced Brussels sprouts for 1–2 minutes, then drain and rinse under cold water. Transfer them to a bowl of ice water to stop the cooking, then drain well.

In a medium skillet over medium heat, cook the bacon pieces until crisp. Add the dried cranberries and chopped almonds, toss to combine, and cook for about 1 more minute to warm the nuts and berries.

Add the drained Brussels sprouts to the skillet and stir for about a minute, just until they are warmed through and well coated with bacon, almonds, and cranberries.

Transfer to a serving dish, drizzle with olive oil and the squeezed lime juice, toss to combine, and finish with the shaved Parmesan on top. Serve warm or at room temperature.
