Moist Banana Muffins Recipe with Cinnamon Streusel Topping

Every time I spot a bunch of overripe bananas on my counter, I get excited—those soft, spotted bananas are perfect for baking or freezing for banana ice cream. If you’ve been tossing “disgusting” ripe bananas, don’t: once baked, they become a rich, natural banana flavor that turns into a delicious treat.

This recipe is a one-bowl method because I prefer keeping things simple—no separate wet and dry bowls. It’s worked well for me, so I don’t change it. I like topping these muffins with sliced banana, a mix of pumpkin and chia seeds, and crushed walnuts, but you can use any topping you prefer—crumbles, other nuts, or extra seeds all work beautifully.

Ingredients

  • 1 flax egg 1 tbsp crushed flax seed mixed with 2 tbsp water
  • 4 large ripe bananas
  • 4 tbsp peanut butter
  • 1 tsp lemon juice or lime juice or a splash of vinegar
  • 1/3 cup cane or coconut sugar
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 2 cups flour

Instructions

  • Preheat the oven to 175°C (350°F). In a large bowl, prepare the flax egg by combining 1 tablespoon crushed flax seeds with 2 tablespoons water; let it sit for about 4 minutes until slightly gelled. Add the ripe bananas to the bowl and mash them with a fork until mostly smooth—small chunks are fine. Stir in the peanut butter, lemon juice (or substitute), sugar, and vanilla until combined.
  • Add the baking powder and baking soda to the bowl and mix them well into the wet ingredients. Then add the flour and stir until you have a thick batter. There’s no need for a separate dry bowl—this one-bowl method keeps cleanup easy.
  • Grease a muffin tin or line it with paper cases and divide the batter evenly among 12 cups. Top each muffin with your chosen toppings—banana slices, seeds, nuts, or a crumble. Bake for about 25 minutes, or until a skewer inserted into the center comes out clean. Allow the muffins to cool slightly before serving. Enjoy!
