Classic Velveeta Pasta with Lots of Fresh Spinach

feature spinach velveeta rotini pasta

This Velveeta rotini with fresh spinach gives the familiar creamy, cheesy comfort of childhood mac and cheese a healthy, flavorful boost. It stays rich and cheesy while adding generous portions of fresh spinach in every serving.

Quick and simple to prepare, this dish works well for lunch or dinner and reheats nicely if you want to save leftovers for later.

corkscrew rotini pasta

Rotini

Rotini, the corkscrew-shaped pasta, is ideal for this recipe. Its twists hold melted Velveeta so each bite is well coated and flavorful. The shape is also easy to eat with a fork, making it a kid-friendly choice for family meals.

If you don’t have rotini, another short pasta shape will work, but rotini is my top pick for best texture and sauce coverage.

fresh spinach

Spinach

A generous amount of fresh spinach makes this pasta both more nutritious and more vibrant. Instead of a small, hidden amount, this recipe features large, leafy pieces of spinach mixed throughout the pasta.

Fresh spinach brings fiber, vitamins, minerals and a bit of plant-based protein. Stirred into the hot, cheesy pasta at the end of cooking, the spinach wilts slightly but maintains a pleasant texture — not the mushy feel of canned or overcooked greens.

Velveeta

Velveeta has long been a staple in many kitchens for its smooth melting properties. It melts evenly, creating a creamy coating for pasta and making it an easy base for quick, comforting dishes.

Is Velveeta Cheese?

Technically, Velveeta is classified as a processed cheese product rather than a natural cheese, because it’s made from dairy-based ingredients that don’t meet the FDA definition of cheese. Regardless of the label, it offers the familiar cheesy flavor and melt that many of us associate with classic comfort recipes.

Does Velveeta Need To Be Refrigerated?

Unopened Velveeta is shelf-stable and does not require refrigeration. Some stores keep it chilled with other cheeses for convenience, but it can sit on a pantry shelf until opened. Once opened, refrigerate to maintain freshness and follow the product’s best-by date on the package.

Salt and Pepper?

Velveeta contains sodium, so additional salt is often unnecessary. Fresh cracked black pepper adds a nice counterpoint to the creamy cheese. Adjust seasoning to your preference — add salt and more pepper if desired.

Fresh Spinach Velveeta Rotini Recipe

Prep Time: 5 Minutes
Cook Time: 10 Minutes
Yield: 4 to 6 Servings

Ingredients

16 oz. rotini pasta, cooked according to package directions
8 oz. Velveeta, cubed
10 oz. fresh spinach, roughly chopped
Black pepper to taste

Supplies

Pan with lid
Colander
Large spoon
Knife

Instructions

1) Cook the rotini according to package directions until al dente.

2) While the pasta cooks, roughly chop the spinach and cut the Velveeta into cubes.

3) Drain the pasta, reserving a little of the cooking water in case you need it to thin the sauce.

4) Return the drained pasta to the pan, add the Velveeta cubes, and set the heat to low. Stir occasionally until the Velveeta melts and coats the pasta. If the mixture seems too thick, add a splash of the reserved pasta water.

5) Season with black pepper to taste.

6) Remove the pan from heat and fold in the chopped spinach gently so it wilts evenly without becoming limp.

7) Serve immediately and enjoy your cheesy spinach Velveeta rotini.
