These blondies are incredibly easy to prepare and require no oven. They’re plant-based, gluten-free and contain no refined sugars—sweetened naturally by dates and maple syrup. The whole recipe takes about 10 minutes to assemble, and chilling in the refrigerator or freezer firms them up for neat slicing.

Store refrigerated for up to a week or freeze for longer storage in an airtight container. The maple syrup pairs beautifully with the walnuts and dates for a satisfying treat.

How To Make This Recipe

Step One. Combine almond butter, melted coconut oil, maple syrup, vanilla (or almond) extract and almond flour to form the base layer. Line a loaf pan with parchment paper and press the mixture evenly into the bottom. Chill in the freezer while you prepare the top layer.

Step Two. If your dates are dry, soak them in boiling water for about five minutes, then cool and pit them. Fresh dates are sticky and easy to work with.

Step Three. In a food processor, combine walnuts, pitted dates and a pinch of salt. Pulse until the mixture forms a sticky, uniform paste.

Step Four. Remove the chilled almond base and press the sticky date-walnut mixture evenly over it. Smooth the top and return to the freezer for about 10 minutes to set.

My dates are really dried out

Soak dried dates in hot water for a few minutes. This softens them and makes them easier to blend into a sticky paste. Fresh dates won’t need soaking.
