Chocolate Chip Mug Cookie Recipe

Ingredients

  • 1 tablespoon butter
  • 1 tablespoon granulated sugar
  • 1 tablespoon packed brown sugar
  • ¼ teaspoon gluten-free vanilla extract
  • Pinch of salt (omit if using salted butter)
  • 1 egg yolk
  • 3 tablespoons all-purpose gluten-free flour blend (I used Bob’s Red Mill 1-to-1)
  • 1 tablespoon unsweetened cocoa
  • 1 tablespoon gluten-free chocolate chips

Instructions

  1. Place butter and both sugars in a large microwaveable mug (10–14 oz). Microwave until the butter melts, about 30 seconds. Stir in vanilla, salt, and the egg yolk until combined. Add the gluten-free flour and unsweetened cocoa and stir again. Fold in the chocolate chips just until evenly distributed.
  2. Microwave for 40–60 seconds, or until the top is risen and set. Microwave times vary by mug size and microwave power—start with the shorter time and add seconds if needed. Do not exceed one minute; the cookie will continue to set as it cools.
  3. Serve warm with ice cream or enjoy straight from the mug with a spoon. Enjoy!

Dairy-Free Substitution Solution – To make this dairy-free, substitute coconut oil or vegan butter for the butter and use dairy-free gluten-free chocolate chips.
