No exaggeration—these are some of the best gluten-free rolls you can bake at home.

They’re naturally dairy- and egg-free as well, making them suitable for vegan diets or for anyone avoiding those ingredients.

I’ve developed this recipe after many attempts during elimination diets and while cooking for family members with allergies. It’s designed to deliver excellent texture and flavor without gluten, dairy, or eggs.

A note from experience

My family has navigated food intolerances and allergies, so I understand how challenging it can be to find satisfying baked goods that work for restricted diets. This recipe is meant to be reliable and approachable so you can enjoy fresh rolls even when avoiding common ingredients.

What to expect

These vegan, gluten-free rolls are easy to make and require only one rise. The dough is sticky, but with a few simple technique tips you’ll shape beautiful rolls with a light, tender crumb. Guests won’t guess they’re free of gluten, eggs, and dairy—unless you tell them.

A couple things to note:

  1. You’ll need a sturdy kitchen mixer. Mix the dough on medium-high for a few minutes to allow the xanthan gum to develop elasticity and give the rolls structure similar to gluten dough.
  2. The dough is very sticky. Work with wet hands when shaping. Keep a small bowl of water nearby and re-wet your hands before forming each roll to prevent sticking.
  3. Handle the dough gently. Smooth each roll quickly rather than pressing or squeezing—think light, confident motions to preserve the rise.

The absolute best gluten free dinner roll I’ve ever had! These are also egg- and dairy-free, so they’re vegan friendly.

Ingredients

  • 1 3/4 cups warm water
  • 1 tablespoon organic cane sugar
  • 2 1/2 tsp active yeast
  • 2 1/2 cups gluten free flour
  • 1 teaspoon salt
  • 1 teaspoon xanthan gum
  • 1/4 cup oil (grapeseed, avocado, or olive)
  • Optional: dried parsley
  • Optional: coarse salt

Instructions

  1. Fill a glass measuring cup with warm water and stir in the sugar. Add the yeast, stir briefly, and let sit 5 minutes until foamy.
  2. In the bowl of a mixer, combine the gluten-free flour, salt, and xanthan gum.
  3. Add the yeast mixture and oil to the dry ingredients. Mix on low to combine, scrape the bowl, then beat on medium-high for 3 minutes to develop structure.
  4. Scrape the bowl, cover with a cloth or plastic wrap, and place in a warm spot to rise for about 35 minutes.
  5. Preheat the oven to 400°F and prepare two baking sheets with silicone mats or parchment paper.
  6. When the dough has risen, fill a small bowl with lukewarm water. Grease a 1/4–1/2 cup measuring cup, scoop dough into wet hands, and gently shape into balls. Place on prepared baking sheets and repeat until all dough is used.
  7. Optionally sprinkle dried parsley or coarse salt on the tops of the rolls.
  8. Bake 26–28 minutes, until the internal temperature reaches around 200°F.
  9. For a deeper brown crust, broil on high for 1–2 minutes at the end, watching carefully to avoid burning.
  10. Allow rolls to cool slightly before serving.
  11. Enjoy!
