This blend is written to be moderate in heat, but you can easily adjust it. Ideas:

  • Reduce or omit the salt for a low-sodium version.
  • Add ½–1 teaspoon more cayenne pepper to increase the spice level.

How to Use Blackened Seasoning

This seasoning is perfect for blackening chicken, fish, or shrimp. For about one pound of protein, a good guideline is 1 tablespoon olive oil and 1½–2 tablespoons of the seasoning.

Basic blackening method (using fish as an example):

  • Pat the fish dry.
  • Coat lightly with olive oil.
  • Rub the seasoning on both sides of the fillets.

  • Heat a skillet (cast iron preferred) over medium-high heat. Add 1 tablespoon olive oil and 1 tablespoon butter and wait until the pan is very hot.
  • Cook the fillets, flipping only once halfway through.
  • Serve with lemon wedges.
