This recipe transforms oats, apples, walnuts and butter into a comforting, slightly crunchy bake that’s hard to resist. I tested and refined it several times and every batch came out delicious.

Ingredients

  • 2 cups Rolled Oats (200 grams)
  • stick Unsalted Butter (175 grams)
  • 6 Large Apples (at least 1.7 pounds/800 grams)
  • 1 cup Walnuts (100 grams)
  • cup Granulated Sugar (170 grams)
  • 2 teaspoons Cinnamon optional

Instructions

  • Process the oats and walnuts in a food processor until they reach a flour-like texture. Grate the apples and set aside.
  • In a mixing bowl, combine the processed oats and walnuts with the sugar and cinnamon, if using. Grease an 8.5×7-inch (22×18 cm) ovenproof dish with butter.
  • Cover the bottom of the dish with about 1 cup of the oat mixture and press down lightly. Add half of the grated apples, then spread 1½–2 cups of the oat mixture over the apples. Repeat with the remaining apples and oat mixture to make layers.
  • Grate or thinly slice the butter and distribute it evenly over the top surface.
  • Bake in a preheated oven at 400°F (200°C) for about 35 minutes, or until the top turns golden brown.
  • Serving suggestion: warm slices and pour over vanilla pudding, custard, or a drizzle of caramel.

Notes

On the day it’s baked the dish is quite soft; refrigerating overnight firms it up and makes slicing easier. Reheat portions in the microwave. This recipe is excellent for make-ahead breakfasts or meal prep.
