The best apple oatmeal bake you will ever taste! Crispy on the outside, moist on the inside, sweet and addictive.

This is an eggless oatmeal bake made without flour—just oats—so it’s naturally suited for those avoiding gluten.
Apples are in season, which makes this the perfect time to bake apple desserts. I’ve been in an apple-baking mood and have tried several favorites, but this apple oatmeal bake has quickly become a top pick.
This recipe transforms oats, apples, walnuts and butter into a comforting, slightly crunchy bake that’s hard to resist. I tested and refined it several times and every batch came out delicious.

Why I love this apple oatmeal bake
- Gluten free option — made with oats instead of flour, so it can work for those avoiding gluten.
- Eggless — no eggs are required.
- Make-ahead friendly — bake a day ahead and refrigerate; reheat slices in the microwave for a quick breakfast.
- Pairs well with vanilla pudding, custard, caramel or a scoop of ice cream.
- Great for meal prep — easy to slice and serve throughout the week.
- Versatile — serves as breakfast, brunch, dessert or an afternoon treat.
This isn’t a traditional apple oatmeal bake, but it’s simple and reliable. You can make it with or without walnuts and it will still be tasty.
The method is straightforward: pulse oats and nuts into a coarse flour, layer the oat mixture with grated apples, and top with thin slices or grated butter (not melted). Bake for 35–40 minutes until the top is golden and crisp.
Serving tip: Warm slices and pour vanilla pudding or caramel over each portion, or serve with vanilla ice cream.

Ingredient substitutions
- Walnuts — replace with pecans or hazelnuts, or omit entirely.
- Sugar — you can use superfine (caster), powdered/icing sugar, or brown sugar instead of granulated.
- Apples — Granny Smith works well for balance, but any apple you have on hand is fine.
- Cinnamon — optional, but it complements the apples nicely.

Apple Oatmeal Bake
Ingredients
- 2 cups Rolled Oats (200 grams)
- 1½ stick Unsalted Butter (175 grams)
- 6 Large Apples (at least 1.7 pounds/800 grams)
- 1 cup Walnuts (100 grams)
- ⅔ cup Granulated Sugar (170 grams)
- 2 teaspoons Cinnamon optional
Instructions
-
Process the oats and walnuts in a food processor until they reach a flour-like texture. Grate the apples and set aside.
-
In a mixing bowl, combine the processed oats and walnuts with the sugar and cinnamon, if using. Grease an 8.5×7-inch (22×18 cm) ovenproof dish with butter.
-
Cover the bottom of the dish with about 1 cup of the oat mixture and press down lightly. Add half of the grated apples, then spread 1½–2 cups of the oat mixture over the apples. Repeat with the remaining apples and oat mixture to make layers.
-
Grate or thinly slice the butter and distribute it evenly over the top surface.
-
Bake in a preheated oven at 400°F (200°C) for about 35 minutes, or until the top turns golden brown.
-
Serving suggestion: warm slices and pour over vanilla pudding, custard, or a drizzle of caramel.
