Why this is a perfect summer recipe
These strawberry basil fruit rolls capture the nostalgia of classic fruit leather with a fresh twist. Ripe strawberries provide natural sweetness while basil adds a subtle herbaceous lift, creating a bright, balanced flavor perfect for warm weather.
This recipe is straightforward and adaptable. Use a dehydrator if you have one, or follow the oven method included here for an easy alternative. The simple ingredient list makes it a great kitchen project when strawberries are in season.
If you enjoy this flavor, consider trying other fruit leather combinations like peanut butter and banana for another naturally sweet snack.

How to dehydrate in an oven
If you don’t have a dehydrator, you can easily dry this fruit leather in the oven. Preheat the oven to its lowest temperature setting. Line a rimmed baking sheet with parchment and spread the blended fruit mixture into an even layer about 1/2 inch thick — too thin and the leather may tear when rolling.
Bake at the lowest temperature for roughly 4–5 hours, checking after a couple of hours since oven temperatures and drying times vary. The fruit leather is done when it is no longer tacky but still pliable. Remove from the oven and allow to cool before cutting and rolling.
When using a dehydrator, follow the manufacturer’s instructions: spread the mixture evenly on a solid dehydrator sheet and dehydrate at around 130°F for about 4–5 hours.

How long do strawberry basil fruit rolls last?
For best flavor and freshness, enjoy homemade fruit leather within three days. Store rolls in an airtight glass container or another container with a tight-fitting lid at room temperature or in the refrigerator to extend freshness slightly.
Properly dried and stored fruit leather can last longer, but texture and flavor are best within a few days of making.
