This easy low carb strawberry mousse brings the fresh flavor of strawberries any time of year by using freeze-dried berries. There’s no cooking or gelatin required, and the recipe works for vegetarian and ketogenic diets.

Even when fresh strawberries aren’t in season, you can enjoy a vibrant strawberries-and-cream dessert with this simple low carb strawberry mousse. Freeze-dried strawberries provide concentrated flavor without the extra water that fresh fruit adds, so there’s no need to cook or use gelatin—fewer steps and a brighter taste.
Freeze-dried berries are versatile. I’ve used them in frostings and granolas in other recipes, and they add consistent, intense fruit flavor wherever you’d use powdered fruit. For this mousse, they’re pulverized to a powder and blended with yogurt and sweetener for a true strawberry profile.

The finished mousse is tangy and balanced rather than overly sweet, thanks to thick Greek yogurt and the natural brightness of the strawberries. The method is straightforward: grind the freeze-dried strawberries to a powder, combine them with sweetener, lemon and yogurt, then fold in whipped cream and whipped pasteurized egg whites for a light, airy texture.
Notes on ingredients and safety: this recipe uses pasteurized egg whites whipped to stiff peaks. Pasteurized egg whites are safe to use without cooking. If you prefer to avoid egg whites, you can skip them and use slightly more whipped cream to maintain volume, though texture will differ.
If you want a variation, try freeze-dried raspberries instead of strawberries for a bright, slightly tangier mousse. Freeze-dried berries are commonly available at grocers and specialty stores.

- 1 ¼ ounces (25 g) freeze-dried strawberries
- ½ teaspoon vanilla extract
- ½ teaspoon stevia glycerite (or more sweetener to taste)
- 1 tablespoon lemon juice
- 1 pinch salt
- 1 cup heavy cream, whipped stiffly
- 2 tablespoons low carb powdered sugar (or your favorite powdered low carb sweetener)
- 2 large pasteurized egg whites, whipped to stiff peaks
Instructions
-
Powder the freeze-dried strawberries in a coffee grinder in batches and place the powder in a medium to large bowl. Add the powdered sweetener, lemon juice, vanilla, stevia glycerite and yogurt, then set aside.
-
In a clean bowl, whip the pasteurized egg whites until glossy and stiff. Set aside.
-
In another bowl, whip the heavy cream with the 2 tablespoons of powdered sweetener until stiff peaks form.
-
Whip the yogurt-strawberry mixture briefly until the sweetener dissolves. Add one-third of the whipped cream and blend on low speed to combine. Set the mixer aside.
-
Fold half of the remaining whipped cream into the mixture gently until incorporated, then fold in the rest of the whipped cream.
-
Working in thirds, gently fold the whipped egg whites into the mousse to preserve the airy texture.
-
Refrigerate for a firmer set, or serve immediately for a softer, lighter mousse.
