Bulgogi is traditionally a Korean dish made with marinated beef, but pork version — known as dwaeji bulgogi — is equally, if not more, addictive. Instead of the soy-forward marinade common with beef bulgogi, pork bulgogi is often prepared with gochujang, a fermented red chili paste that blends sweet, salty and spicy notes. You can find gochujang in most grocery stores’ international aisles or at any Asian market. In these sliders, the paste provides depth and heat that pair beautifully with crunchy slaw and creamy wasabi mayo.

Ingredients
- 2 packs slider buns
- Sriracha (optional)
For the Pork:
- 1 lb pork tenderloin, very thinly sliced
- 3 garlic cloves, crushed
- ¼ cup soy sauce
- 2 sprigs green onion, chopped
- 1 yellow onion, sliced
- 2 teaspoons sesame oil
- 2 teaspoons freshly grated ginger
- 1 tablespoon brown sugar
- ¼ cup red pepper paste (gochujang)
- ¼ teaspoon ground black pepper
For the Kimchi Slaw:
- ½ head cabbage, thinly sliced
- ¼ red onion, thinly sliced
- ¼ cup green onion, sliced
- 1 carrot, sliced or shredded
- ¼ cup rice vinegar
- 1 tablespoon fish sauce
- ½ teaspoon ground ginger
- 1 clove garlic, minced
- 2 teaspoons sriracha
- ¼ cup water
- 1 tablespoon sugar
For the Wasabi Mayo:
- 1 cup mayonnaise
- 2 cloves garlic, crushed
- 2 teaspoons prepared wasabi
Instructions
For the Pork Bulgogi:
- Combine all pork ingredients in a large bowl or a sealed bag. Marinate in the refrigerator for at least 1 hour, preferably overnight for best flavor.
- Heat a large pan over medium-high heat. Cook the marinated pork and onions until the pork is browned and cooked through.
For the Kimchi Slaw:
- Toss all slaw ingredients in a large bowl or container. Mix well so the cabbage and vegetables are evenly coated. Cover and refrigerate at least 1 hour to let the flavors meld.
For the Wasabi Mayo:
